By popular demand, I bought good food. Corned beef brisket, smoked and braised with an au jus-based bbq sauce. Made by yours truly in 4 and a half hours lol. Its only halfway done so far... I may merge this with the other food topic later. Anyway, it is brining in beer and apple juice with an assortment of seasonings.. Next step is grilling the bitch over a hot grill with smoking wet wood chips infusing it with a moderate hickory smoke, as well as giving it a thicker crust of flame-scorched grill lines at 45 degree angles to enhance its appearance. Grill it on both sides for 15 minutes a side to achieve maximum smoke flavour without ruining the meat's tenderness. Then straight into tight foil with a little olive oil to prevent sticking, and into the oven where it'll cook over the next 2 hours til its pull-with-fork-tender. As an added bonus, the last 20 minutes will be spent with Brewer's No. 59 bbq sauce. Cover it loosely with foil and let it become a foil of heaven...
